You need some Lapis Legit in your life
You're not allowed to follow this recipe if you don't know the metric system btw.
This should be 20 portions, so enough for about 2 people.
8 eggs
375 grams unsalted butter (room temperature)
300 grams white caster sugar
Pinch of salt
225 grams flour
1 tsp vanilla extract
1 tbsp cinnamon
1.5 tsp cloves
1 tsp nutmeg
1 tsp cardamom
0.5 tsp anise powder
Separate the eggs: Whip egg whites until stiff peaks form.
Mix the batter: Beat butter with caster sugar and salt until fluffy. Add egg yolks and mix until smooth. Gradually add flour.
Fold in egg whites: Gently incorporate 1/3 of the egg whites, then the remaining two parts. Divide the batter into two bowls.
Flavor the batters: In one bowl, fold in 1 tsp vanilla extract for the light layers. In the other, fold in the spices for the brown layers.
Halfway there
Prepare the pan: Line the bottom of a springform pan with parchment paper. Spread a thin layer of brown batter (no thicker than 5 mm) on the bottom. Bake for 4-5 minutes at 180 °C (top and bottom heat).
Switch to grill: Change the oven setting to grill (about 200 °C). Spoon the same amount of light batter onto the baked layer, spreading it carefully to avoid damaging the bottom layer. Bake under the grill for at least 4 minutes until cooked.
Alternate layers: Repeat the process, alternating between brown and light batter, using the same amount each time and grilling until each layer is golden brown and cooked.
Cool: Allow the cake to cool completely before slicing.
Congrats! You can die happy now.
